Our Story

Bowl of chocolate cookie dough with flour, eggs, milk and cocoa on a wooden table

In The Black Cookie Co began in a family kitchen, with a mother and daughter who baked together for most of their lives. Today the company is owned by Dina Black and Chef Rosie Romo. Rosie runs the kitchen, and Dina's mom, Marian, is the reason it exists. Her recipes are still the ones we bake from every morning.

Dina Black co-owns In The Black Cookie Co with Chef Rosie Romo. She baked beside her mother, Marian, from the early 90s on, and the only years they missed were 2006 and 2020, when Dina was being treated for breast cancer. She and Marian used to say that the best way to someone's heart is through their stomach, and we still bake by that.

Marian Black started baking cookies in the early 90s, and her daughter Dina was right there with her. Marian grew up on a farm in Illinois with two brothers and nine sisters, and she liked to say, "We were eating organic and we didn't even know it." She baked with the kind of ingredients she grew up on, and she believed you could taste it. Marian passed away on December 4, 2022. Her family remembers her as a mother and grandmother, and every cookie we bake still starts with her.

Chef Rosie Romo trained in classical French pastry at Le Cordon Bleu and spent more than 20 years as an executive chef before she came to the bakery. She has a simple test for a good cookie. The first bite should crunch, then the cookie should turn soft, and then the flavor should come through. She keeps the sugar in check, because too much of it covers up everything else, and a well-made cookie lets you taste what it's made of.

If you need a cookie gluten free or dairy free, ask when you order. Rosie can make any cookie on the menu either way. The dairy-free ones come out a little different in texture, and she'll tell you that up front.

Pualani and Hank Aaron are the bakery dogs, and they're always first in line to taste a new recipe.
